1 small Onion, chopped

Original recipe instructions & additional ingredients for the Lentil Soup, for those without a pressure cooker:
Use 2C "quick cooking Lentils” rinsed. Then put them in a pot with the bacon and vegetables and 2 qts boiling water. Simmer covered 30 mins. Saute onion in butter. Ladle 1/2C lentil soup into the mixture. Stir in 2T cider vinegar or lemon juice (which my mother leaves out). Mix into lentil soup. Add meat. Also calls for a Bay Leaf. Cook 30 mins covered. Add salt and pepper. "I think it’s better after it sits a day." If using regular lentils, rinse, cover with water and boil 2 mins, let soak 1 hour and proceed with recipe.
